What you've got there is one of the standard 60-in-1 boards, and that particular board is such that you're only going to be able to adjust the game settings if you get into the board's settings menu.
There is a bank of dipswitches on that board. Turn the machine off, switch #4 to ON, turn it back on, and then you'll be in the setup mode.
The next hurdle you're going to have to deal with is that you can only cycle through the menu if you have a second action button (ie, another "switch", which the menus refer to as "S2"). The problem is that if it's a DK CP, then you only have one action button (Jump).
However, this is still doable. I can see that you have a JAMMA harness in there, so I'm curious to see the control panel/wiring. We can definitely make this happen though if it's JAMMA. I am using standard DK wiring, so it was tricky for me, but I managed to rig up another button and I use it basically by hotwiring it to the pin on that PCB.
